Abstract
Conventional food packaging faces considerable challenges regarding its environmental impact and safety. This study aimed to develop polyvinyl alcohol/fucoidan (PVOH/FCN) electrospun films for the co-encapsulation of Lactiplantibacillus plantarum (LP) and dihydromyricetin (DHM). The effects of DHM concentration on encapsulation efficiency and antioxidant, antibacterial and anticancer activities were investigated. The results confirmed hydrogen bonding between DHM and PVOH/FCN films, with DHM dispersed in an amorphous state. Moreover, DHM enhanced the thermal stability of the PVOH/FCN/LP electrospun films. The PVOH/FCN/LP electrospun films containing 1.6% ( w / v ) DHM demonstrated the highest encapsulation efficiency, which was significantly higher than that of the other groups ( P < 0.05). Furthermore, the incorporation of DHM enhanced the biological activities of the electrospun films, including antioxidant activity, antibacterial activity and antiproliferative activity against Caco-2 colon cancer cells. Preservation tests on blueberries demonstrated the superior efficacy of PVOH/FCN/LP electrospun films containing 3.2% DHM. In summary, PVOH/FCN electrospun films co-loaded with probiotics and DHM presented promising potential for active food packaging applications.
